The first time I had brisket I was mesmerized. The taste of subtle smokey meat on your tongue, the buttery fat melting instantly and coating your mouth, the notes of high-quality salt, black pepper, and other spices on the bark all coming together in a single bite to play their parts perfectly to create a symphony of flavors that yields a blissful moment in which the world stops. You close your eyes and for a moment everything is okay. Your stress melts away, the noise of life is muffled, and you enjoy the moment.

This is the moment I am passionate about seeking out and delivering to each person who eats my BBQ. When I see friends and family experience this, every ounce of hard work that goes behind good, low and slow Texas BBQ is worth it. Now, I want to bring that experience to you! This is truly a passion of mine and I want to share it with the world.
